Spicy Chicken Cabbage Soup

Ingredients

| 3 lb | Boneless, Skinless Chicken Thighs |
| 1 head | Cabbage, chopped in 1/8ths, 1/2 inch slices |
| 2 large | Zucchini, roughly chopped |
| 1 large | Yellow Onion, roughly chopped |
| 2 15oz cans | Diced Tomatoes |
| 6 cloves | Garlic, thinly sliced |
| 8 cups | Water |
| 8 tsp | Better Than Bouillon Chicken |
| 1 tbsp | Parsley |
| 1 tbsp | Thyme |
| 1 tbsp | Sambal Oelek (Chili Paste) |
| 2 tsp | Salt |
| 2 tsp | Pepper |
Instructions
- Add water and bouillon to pot. Bring to simmer. Stir well.
- Poach chicken until cooked, about 20 minutes. Remove chicken and set aside.
- Add the rest of the ingredients except the bay leaves and zucchini. Bring back to simmer. Simmer covered until able to stir, about 10-15 minutes. Stir well.
- Shred chicken and add back to pot. Stir well. Add bay leaves and zucchini, and simmer uncovered for another thirty minutes to an hour to let flavors meld.
Suggestion: Experiment and add whatever keto-friendly vegetables you like. Add radishes. They turn out like potatoes in soups and roasts. Try celery. Mushrooms would probably be good too.
